Winemaking PhilosophyAt Alpha Domus our philosophy is to produce premium wines from Hawkes Bay, fully representative of their terroir.These distinctive wines from Hawke's Bay display good varietal charactes and are powerful without forsaking the qualities that make a wine enjoyable right through to the last drop. The emphasis is on fruit definition, mid-palate fullness, subtlety, complexity and elegance, and structured to ensure that the wines will age gracefully; a hallmark of Alpha Domus.
No manual labour is spared in the production of premium quality grapes. This attention to detail in every growth stage means that bud, shoot thinning and positioning, bunch thinning and second set removal are just some of the passes made in the vineyard annually.
Alpha Domus is an accredited member of Sustainable Wine Growing New Zealand, an environmentally conscious group dedicated to ensuring an industry standard for sustainable winegrowing.
The WineryEstablished in 1995, the winery is set amongst the family estate vineyard. This ensures that the time from harvesting to processing is minimized and fruit quality preserved.
The winery is well equipped with dedicated red and white fermentation areas. The white fermentation area contains large stainless steel tanks with fully automated temperature control systems and refrigerated rooms for white barrel fermentation. The red fermentation area contains purpose built red fermentation tanks with automated temperature control able to cool or heat ferments. In keeping with traditional winemaking methods, large oak cuves, open vats and a one tonne basket press are also utilized during wine production.
The addition of a temperature controlled barrel hall in 2003 allows careful maturation of our premium red varietal wines.
